Massaged Kale Salad with Creamy Fire Cider Hemp Seed Dressing
I'm a big fan of massaged kale salads. I know kale gets a lot of scrunched noses, and honestly, the scrunchers aren't entirely wrong about raw kale in most of its forms. But a properly massaged kale salad is a different thing entirely.
The leaves go from tough and bitter to silky and almost sweet, and they hold their own under a bold dressing in a way that most greens can't. It's my forever favorite salad.
This version is built for summer: a base of massaged kale piled with chilled roasted carrots, beets, cauliflower, and red onion, all brought together by a creamy hemp seed dressing spiked with Hibiscus Orange Fire Cider. It's the kind of salad that eats like a meal.
From the Herbalist's Pantry: Fire Cider
Fire cider is an apple cider vinegar tonic steeped with pungent, warming herbs, traditionally garlic, ginger, onion, horseradish, and hot pepper, sweetened with raw honey. The name was coined by herbalist Rosemary Gladstar in the late 1970s, and it's been a home remedy staple ever since: warming, circulation-stoking, and deeply savory.

HOW TO MAKE
Massaged Kale Salad with Creamy Fire Cider Hemp Seed Dressing Recipe
Serves 2-4.
Ingredients:
For the salad:
- 2 large carrots, chopped into 1/2" rounds
- 2 beets, chopped into 1/2" half moons
- 2 cups cauliflower florets
- 1/2 red onion, sliced into 1" wedges
- 2-3 tablespoons olive oil
- salt & pepper
- 1 bunch green or red curly kale, chopped
- Optional: finish with a sprinkle of extra hemp hearts and Hibiscus Orange Fire Cider Finishing Salt
For the dressing:
- 1/2 cup hemp hearts
- 1/3 cup water
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 3 tablespoons Hibiscus Orange Fire Cider
- 1/2-3/4 teaspoon salt, to taste
Instructions:
- Roast the veggies:
- Preheat the oven to 375F.
- Toss the carrots, beets, cauliflower, and onion with olive oil, salt, and pepper and then arrange in a single layer on a lined or lightly oiled sheet pan. Roast for 25 minutes, stirring halfway through.
- Remove from oven and allow to cool.
- Make the dressing:
- Add all ingredients to a high-speed blender and blend on high until uniformly smooth and creamy. Taste and adjust salt as needed.
- Assemble the salad:
- Add the chopped kale to a large salad bowl and drizzle the dressing over evenly. With clean hands, massage the dressing into the kale until the kale softens and is evenly coated with dressing.
- Top with the roasted veggies and if desired, sprinkle with extra hemp hearts.
Notes:
- Make it ahead. This salad is a great one to build in stages. Both the roasted veggies and the dressing can be made up to three days ahead and stored separately in the refrigerator. When you're ready to serve, massage the dressing into the fresh kale and top with chilled veggies. The dressing may thicken as it sits; thin it with a splash of water or more fire cider and whisk together before using.
