Collection: herbal honey

spoonable treat or pantry staple? you decide.

Our herbal honeys start with raw honey from local Appalachian beekeepers, then finely ground herbs, spices, and fragrant flowers are stirred right in. Thick-ish, spoonable, and layered with flavor that deepens as it sits. Stir it into hot tea, spoon it over yogurt or ice cream, or eat it straight from the jar.

why raw honey matters here

Raw honey hasn't been heated or filtered past its natural state, so it keeps its own enzymes, pollen, and flavor complexity. We pair it with finely ground herbs fresh from small domestic family farms for an infused honey that tastes as close to the source as it gets.

what is herbal honey?

Herbal honey is raw honey with herbal, spices, or fragrant flowers added for flavor, nutritional, and medicinal uses. Our herbal honeys are electuaries, made by stirring finely ground herbs right into the jar so nothing is strained out.

is herbal honey the same as infused honey?

Related, but not always the same. Infused honey is a broad category of honey flavored with herbs, spices, and fragrant flowers. Most infused honeys are strained so only the honey remains. An electuary is a specific type of infused honey in which finely ground herbs stay in the jar. The resulting texture is different from a strained honey, and because the herbs stay in, the flavor matures and deepens as it sits. Technically, all of our honeys are electuaries, but we just call them herbal honeys.
