What is an herbal electuary?

An electuary is an old herbal tradition: powdered herbs and spices mixed into honey to create a nourishing, medicinal paste. The term might sound a little archaic (it’s said to come from a Greek word meaning “to lick up”), but really, it’s just herbal honey, and one of the tastiest ways we know to help the medicine go down.

Is an electuary the same as an infused honey?

Not quite. An infused honey has the plant material strained out, while a honey electuary blends finely ground herbs directly into the honey to create a rich, medicinal paste.

Each spoonful delivers the benefits of the whole plant, and over time, the herbs gently infuse the honey, deepening both the flavor and the medicine.

How do I use an herbal electuary?

In our world of food-forward herbalism, there are two ways to use an herbal honey: 

  • By the spoonful: the most direct and therapeutic approach
  • Anywhere you'd use honey: stirred into tea or coffee, drizzled over yogurt or fruit, spread on buttered toast, whisked into dressings and marinades

How long does it last?

We recommend you use your herbal honey within 6 months after opening.

Why has my herbal honey thickened or solidified?

Yes! Herbal electuaries naturally thicken and may firm up over time, especially in cooler environments... similar to how raw honey crystallizes.

While this can make them less spreadable, they’re perfectly safe and delicious to enjoy.

If desired, to soften, simply place the jar in a shallow bowl of warm water for a few minutes, or remove the lid and microwave for 5 seconds (and no more than 5 seconds!)
