HERBALIST'S ✿ NOTES

about the botanicals

Field of white and yellow chamomile flowers with a blurred background

Matricaria chamomilla

chamomile

Chamomile is a daisy-family plant related to calendula and dandelion whose name comes from the Greek for "ground apple." Its floral, slightly sweet notes reminiscent of honeyed apple pair beautifully with anise hyssop and ginger.

Withania somnifera

ashwagandha

The name comes from the Sanskrit for "smell of the horse," a nod to the strong, musky scent of the fresh root. Ashwagandha is a short shrub in the nightshade family, a cousin of tomatoes, potatoes, and eggplant, with orange-red berries wrapped in papery husks that earn it the nickname "winter cherry." The root is earthy and a little bitter.

Agastache foeniculum

anise hyssop

A prairie native of the northern Great Plains, anise hyssop is neither anise nor hyssop. It's a mint-family plant whose leaves taste of licorice with a floral, lemony sweetness, and whose purple flower spikes bloom from June until frost, which makes it a magnet for bees. Plains peoples, including the Cheyenne, have long enjoyed it.

OLD WORLD WISDOM MEETS THE MODERN PANTRY

meet our herbal honey (or electuary)

a collage of pressed flowers, herbs, and bees on flowers with a jar of honey and a hone dipper

So much more than just infused.

An electuary (finely ground herbs and spices stirred into honey) is an old apothecary preparation. Think matcha versus a cup of green tea: with matcha, as with our honeys, the whole ground plant stays in the jar. Expect a thick-ish, velvety, spoonable texture with a flavor that deepens as it sits.

Nourishing & Delicious!

This has replaced my "spoon of almond butter" dessert after dinner. It is delicious on its own or mixed in a tea or spread on a cracker. I absolutely love it, and love knowing I'm doing something good for my nervous system as well!

FAQs

How do I use an herbal electuary?

First, give it a stir. Then, in our world of food-forward herbalism, we use herbal honeys in two ways:

  • By the spoonful: for a sweet, nourishing treat
  • Anywhere you'd use honey: stirred into tea or coffee, drizzled over yogurt or fruit, spread on buttered toast, whisked into dressings and marinades

What does Chamomile & Calm Herbal Honey pair well with?

Chamomile & Calm pairs oh-so well with:

  • Chamomile tea
  • Citrus, especially lemon
  • Oatmeal with blueberries and a spoonful of nut butter
  • Graham crackers and almond butter

How long does it last?

We recommend using our herbal honeys within 6 months after opening.

Why has my herbal honey thickened or solidified?

Herbal honeys can naturally thicken or firm up over time, especially in cooler environments, much like raw honey crystallizing. This is completely normal and doesn't affect safety or flavor. If you'd like it softer, set the jar in a shallow bowl of warm water for a few minutes or microwave uncovered for no more than 5-10 seconds.
