In traditional elderberry syrups, elderberries are often simmered together with spices like cinnamon, ginger, and clove, and then sweetened, usually with cane sugar, for thickness and shelf life.

This oxymel uses raw apple cider vinegar and honey instead, which act as both solvent and preservative. There's no heat required, effectively preserving the more sensitive beneficial compounds in the plants.
