Frozen Hot Chocolate

Ingredients:
For the hot chocolate:
- 1 can (13.5 fl oz) full-fat coconut milk
- 1 cup other non-dairy milk of choice (or sub more coconut milk)
- 1/3 cup dark chocolate chips (use 85%+ to keep the sugar content lower)
- 2 tablespoons cocoa powder
- 2 tablespoons After Dinner Mint Herbal Honey
- 1/2 teaspoon vanilla extract (optional)
To make frozen hot chocolate (per serving):
- 3/4 cup chilled hot chocolate
- 1 1/2-2 cups ice

Instructions:

Make the hot chocolate concentrate ahead of time: In a small saucepan, bring full-fat coconut milk and the non-dairy milk to just a boil.
- Once at a boil, remove from heat, add in chocolate and cocoa powder and whisk until melted & mixture is uniform.
- Then, whisk in the After Dinner Mint Herbal Honey and, if using the vanilla extract.
- Allow the hot chocolate to cool completely or refrigerate overnight.

Blend it into a frosty: After the hot chocolate has chilled completely, add 3/4 cup of the mixture and 1 1/2-2 cups of ice per serving to a blender. Blend until thick and frosty. Transfer to a glass, garnish as desired, and enjoy!
