HERBALIST'S ✿ NOTES
about the botanicals
Theobroma cacao
raw cacao
Rich in antioxidants and full of naturally bitter compounds called flavanols, this seed of a tropical rainforest tree is where chocolate begins. Its Latin name means "food of the gods," and its deep, chocolatey flavor pairs perfectly with peppermint for a classic, comforting combination.
Mentha x piperita
peppermint
Peppermint is a natural of hybrid of watermint and spearmint, and gets its cooling bite from menthol, the compound that makes mint feel so refreshing. Its bright, clean flavor cuts through rich chocolate and lifts the whole spoonful for a cool, refreshing finish.
Matricaria chamomilla
chamomile
Chamomile is a daisy-family plant related to calendula and dandelion whose name comes from the Greek for "ground apple." Its floral, slightly sweet notes reminiscent of honeyed apple harmonize beautifully with mint and cacao for a decadent post-dinner treat.

Mix, Match, & Make It Sweet!
Can't choose just one? Relatable. Treat yourself (and your pantry) to a trio of our most-loved herbal honeys. Delicious, nourishing, and utterly spoonable.
An electuary (finely ground herbs and spices stirred into honey) is an old apothecary preparation. Think matcha versus a cup of green tea: with matcha, as with our honeys, the whole ground plant stays in the jar. Expect a thick-ish, velvety, spoonable texture with a flavor that deepens as it sits.
We recommend you use your herbal honey within 6 months after opening.
Why has my herbal honey thickened or solidified?
Herbal honeys can naturally thicken or firm up over time, especially in cooler environments, much like raw honey crystallizing. This is completely normal and doesn't affect safety or flavor. If you'd like it softer, set the jar in a shallow bowl of warm water for a few minutes or microwave uncovered for no more than 5-10 seconds.
