Chocolate-Dipped Strawberries with Rose Honey Cashew Crème

Every February and Valentine's Day brings new life to strawberries in the guise of a delicious chocolate coating. And let's be honest, they're already pretty perfect as they are.
However, this Valentine's Day, we're taking this romantic classic and making it even more swoon-worthy with some edible flower confetti and some rose-infused herbal honey that turns simple pleasure into deep nourishment.
Allow us to set the stage: Delicate floral notes from our Charmed & Delighted Herbal Honey meet perfectly sweet and juicy strawberries enrobed in rich dark chocolate, speckled with mineral-rich sea salt and edible flower confetti. The rose-scented honey cashew crème adds a silky aromatic layer that transforms each bite into something heart-opening. Chocolate-Covered Strawberries with Rose Honey Cashew Crème
What you'll need:
For the rose-honey cashew crème:
- 3/4 cup raw cashews, soaked overnight, drained
- 1/3 cup milk, dairy or non-dairy
- 1 1/2 tablespoons Charmed & Delighted Herbal Honey
- 1/2 teaspoon vanilla extract
- pinch of sea salt
For the chocolate-covered strawberries:
- 12 ripe & sweet strawberries
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil, optional for easier dipping
- Don't Forget the Flowers Floral Finishing Salt (or Summer Nights Florafetti if you prefer without salt)
Instructions:
Make the Cashew Crème:
- To a high-speed blender, add all ingredients for the cashew creme and blend on high until smooth and creamy.
- If desired, you can adjust to your preferences by adding more milk to thin and/or adding more honey if you'd prefer it sweeter.
- Once it's too your liking, transfer to a bowl or glass storage contain and allow to cool in the refrigerator. (You can, of course, enjoy this cashew crème at room temperature, however, chilling it help to really bring out the rose flavor).
Wash & Dry the Strawberries:
- Wash your strawberries under running water and set on a towel to dry. You can carefully pat them with a dry towel to speed up this process. (Before dipping into chocolate, ensure your strawberries are as dry as possible.)
Melt the Chocolate & Prepare Your Space:
- While your strawberries are drying, slowly melt your dark chocolate chips and coconut oil together in a double boiler over low-medium heat. Stir occasionally.
- While you're waiting for your chocolate to melt, prepare a plate or pan by lining with parchment paper. Ensure the surface area is big enough for laying out 12 strawberries with space between them.
- Then, once your chocolate chips are melts, remove from the heat.
Dip & Sprinkle!
- Holding the strawberries by their green leafy tops, slowly dip them in the melted chocolate as deep as you wish and then place on the prepared pan or plate.
- Sprinkle with either Don't Forget the Flowers Floral Finishing Salt or, if you prefer without salt, Summer Nights Florafetti Edible Flower Garnish.
- Then, repeat this process until all 12 strawberries are dipped and decorated!
